Aunt Katie’s Cornbread Dressing

My Sister-in-law's dressing is the best I have ever had. It's pretty much what made me like her when she started dating my little brother, just kidding! It's so good and my most favorite dish that she always makes me an extra to take home. I hope you enjoy this yummy dressing recipe just as much as I do!

Ingredients
  

  • 8 tbsp butter divided
  • 2 cups chopped onion
  • 2 cups chopped celery
  • 1 loaf white bread crust removed and cubed
  • 1 pan cornbread, crumbled She uses Jiffy
  • 1/4 cup chopped parsley
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 egg beaten
  • 14 oz can of chicken broth

Instructions
 

  • Preheat oven to 325
  • melt 4 tbsp of butter in a large skillet 
  • saute onion and celery until tender
  • put on lid and stew for about 10 minutes
  • combine all other ingredients, plus 4 more tbsp of melted butter
  • Put in a 9×13 casserole dish
  • Bake 1 hour (probably less)

Notes

*Add broth slowly–you may need more or less, you don’t want it soggy or dry
**Can be assembled and frozen, but must be thawed before baking

We only have this corn twice a year, Thanksgiving and Easter but we crave it all year round!

Ingredients
  

  • 16 oz frozen corn kernels
  • 8 oz whipped cream cheese
  • 1/2 cup butter
  • 1/2 cup milk
  • 1 tbsp white sugar
  • salt and pepper to taste

Instructions
 

  • Dump all of the ingredients above into a crockpot and stir well.
  • Cook on high for 2-4 hours or on low for 4-6 hours.

Hayden loves hot drinks like his mama. He is a year-round apple cider drinker. He loves adding caramel syrup to his.For parties we will double this recipe and use a roaster.

Ingredients
  

  • 1 gallon apple cider
  • 1 cup brown sugar
  • 1 tsp whole cloves
  • 3 cinnamon sticks
  • 2 sliced oranges

Instructions
 

  • Combine all ingredients into a crockpot.
  • Stir well.
  • Cook on  High for 1.5 hours or Low for 3 hours.
  • Before serving, remove the whole spices and oranges

Notes

We top ours with thin apple or oranges slices, cinnamon sticks, and cranberries.
 
To make this a Caramel Apple Cider:
Hayden adds 1 tbsp. of caramel syrup and stirs it well and tops it off with whip cream.

Brooklyn’s Favorite Hot Cocoa

She definitely loves her chocolate drinks!This is a great recipe for a large crowd. We have served this at very large events by tripling the recipe and using roasters.

Ingredients
  

  • 6 cups whole milk You can also use lactose free
  • 14 oz can of sweetened condensed milk
  • 2 cups heavy whipping cream
  • 2 tsp vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 2 cups milk chocolate chips Enjoy Life is a great brand!

Instructions
 

  • Combine all of the ingredients except the chocolate chips into a crockpot
  • Whisk well (until it is no longer lumpy)
  • Add the chocolate chips and stir well
  • Cook on low for 2 hours or until the chocolate chips are melted (I will stir every 45 minutes while it's cooking)

Notes

Toppings:
Brooklyn’s favorite toppings are: regular whip cream and sprinkles
The rest of the family uses peppermint sticks and flavored whip cream toppings.
 
Extra suggestion: Turn on a Christmas movie and light a fire. Enjoy!

Londin’s Spicy Chili

My family likes spice! This chili is amazing!Dump in the crockpot and go, I like that.

Ingredients
  

  • 1 lb ground beef
  • 1 lb sausage
  • 1 can rotel
  • 1 can black beans
  • 1 can cannellini beans
  • 1 can light kidney beans
  • 1 can diced tomatoes
  • 1 chili kit (seasoning mix)
  • 1 jar Stubbs BBQ Sauce – Original

Instructions
 

  • Spray the crockpot or use a "slow cooker liner"
  • Brown the ground beef and sausage, drain.
  • Pour meat into the crockpot.
  • Pour all of the other ingredients straight into the crockpot.
  • Mix well.
  • Turn on High for 4 hours or low for 6 hours.

Notes

We serve ours with shredded cheddar cheese and oyster crackers.

7 Layer Taco Party Dip

Anytime someone comes over they expect me to make this dip and to have it at every party we attend!For a large crowd, I would double or triple this recipe and put it in a trifle bowl.It will be gone in minutes so make sure you get a bite first!

Ingredients
  

  • 1 package taco seasoning mix I use gluten-free
  • 16 oz can of refried beans
  • 8 oz container whipped cream cheese
  • 16 oz sour cream
  • 1 jar salsa
  • 1 bunch chopped green onions
  • 1 small bag shredded lettuce
  • 2 cups shredded cheddar cheese

Instructions
 

  • In a bowl, blend the taco seasoning mix and refried beans and, spread this mixture onto a large serving platter.
  • Stir the sour cream and cream cheese together, spread this mixture over the refried beans.
  • Spread salsa over the cream cheese/sour cream mixture.
  • Spread shredded lettuce over the salsa.
  • Spread the shredded cheese over the lettuce.
  • Sprinkle with green onions.

Notes

Optional: top with olives or diced tomatoes (we normally omit this part)
