Easy Sausage Balls

I always triple this recipe because they are gone within minutes.Warning: You can't eat just one!

Ingredients
  

  • 1 lb sausage
  • 4 cups shredded cheddar cheese
  • 3 cups baking mix I use Bisquick

Instructions
 

  • Pre-heat oven to 400 degrees
  • Mix sausage, cheese, and baking mix
  • Shape the mixture into a walnut-sized ball
  • After shaping, line a foil-lined baking sheet with the balls
  • Bake 12-15 minutes

Mommin’ Overnight Oats

I call these my “Mommin’ Overnight Oats!” because they are super easy and super yummy for every busy Momma. They re not just for breakfast but  perfect for snacks throughout the day.
The recipe below is dairy free and gluten free, if you don’t have an allergy that you can use regular oats and regular milk.

Ingredients
  

  • 1/3 cup Gluten-Free Rolled Oats I use Red Mill
  • 1-2 tsp Pure Maple Syrup I use Kirklands or Good & Gather
  • 1/2-3/4 cups Oat Milk I use Oatly
  • 1-2 Tbsp Crunchy Peanut Butter or Almond Butter
  • 1 tsp Cacao Powder Optional
  • 1 tsp Mini Chocolate Chips or Cacao Nibs

Instructions
 

  • Add all ingredients to the jar
  • Shake & Chill! Refridgerate for at least 8 hours.
  • Serve! Serve chilled. Enjoy! You can also heat them up, my Hubby doesn't like cold oats so he heats his up in the microwave.

Notes

The recipe above makes 1 jar, double or triple the above ingredients to meal prep for the week.

Mini Van Momma’s unite….Canadian Bacon & Egg Cups!
Our family favorite and the quickest and most filling breakfast!
Throw a batch in the oven on Sunday night and you will have breakfast for the week!

Equipment

  • Cupcake Pan (12 Cups)

Ingredients
  

  • 12 slices Canadian Bacon
  • 12 Eggs
  • Sea Salt and Fresh Pepper
  • Cooking Spray
  • Cheese optional

Instructions
 

  • Preheat the oven to 400 degrees
  • Spray the cupcake pan with cooking spray
  • Line each cup with a piece of Canadian bacon
  • Crack an egg into each cup
  • Season with salt and pepper and sprinkle with cheese (optional)

The Minick Fams Monkey….bread that is!
Monkey bread has been our Christmas morning tradition for the past 19 years. 
We prep our the night before so we can slide it into the oven on Christmas morning and not miss any magic happening in our home.

Equipment

  • Bundt Pan

Ingredients
  

  • 3 cans Cinnamon Rolls
  • 1.5 cups Butter
  • 1 cup Brown Sugar
  • 1 tsp Cinnamon
  • Cooking Spray

Instructions
 

  • Preheat oven to 350 degrees
  • Grease your bundt pan, very well.
  • Microwave the butter, cinnamon, and brown sugar until the butter is melted. Stir well and set aside.
  • Tear apart the cinnamon rolls add and them to a gallon freezer bag
  • Pour the mixture above into the bag with the cinnamon rolls, toss so they are mixed well.
  • Pour the bags straight in to the bundt pan (Make sure everything is coated well)
  • Cook in the oven for 35 minutes
  • The bread should be brown and cooked thoroughly.
  • Let the bread cool on a rack for 20 minutes then turn upside down onto a platter.

Notes

We serve ours with strawberries and blackberries…and of course bacon!

Pancake and Bacon Strip Dippers

The kids favorite, Pancake and bacon strip dippers!
You can use the pancake recipe below or if you are short on time, buy the Bisquick jugs where you just add water to the jug. I use Bisquick most of the time and add vanilla extract to it!
Course Breakfast

Ingredients
  

  • 4 strips Thick-Cut Bacon

Pancakes

  • 1 cup All Purpose Flour
  • 2 tbsp White Sugar
  • 2 tps Baking Powder
  • 1 Egg beaten
  • 1 cup Milk
  • 1 tbsp Vegetable Oil
  • 1 tbsp Vanilla Extract

Instructions
 

To Prepare Bacon

  • I use a microwave bacon rack, it only takes 4 minutes to cook and it drains a good bit of the grease so you don’t have to worry about upset tummies.

To Make the Pancakes

  • Combine all of the ingredients above. Mix well.
  • Heat your griddle to 300 degrees 
  • Coat your griddle well with cooking spray
  • Spoon a thin amount of pancake mix onto the griddle
  • Place the cooked bacon in the middle
  • Spoon another thin amount of the pancake mix so the bacon is covered.
  • Cook until the batter starts to bubble up and then turn over and cook the same amount of time.

Notes

You can dip them into syrup, and you can even add fruit to the top of the pancakes and eat with a fork.
Such a fun, easy, and super filling breakfast!
**In the fall and winter months, I add pumpkin or apple pie spice to the mix.
