Peanut Butter Energy Balls
These are my kiddos favorite after school snack. They are super yummy!
Course Snack
Cuisine American
- 1 1/4 cups gluten free rolled oats
- 2 tbsp flax seed
- 1/2 cup crunchy peanut butter
- 1/3 cup honey
- 1 tsp pure vanilla extract
- 1/2 cup semi sweet chocolate chips
Place all of the ingredients in a large mixing bowl and stir to combine. Place the bowl in the refrigerator for 1 hour to set (this will make the balls easier to roll later on).
Remove the bowl from the refrigerator and portion the dough into balls of desired size and place them on a cookie sheet. (I store mine on a cookie sheet in the fridge. Until they are hard and then I move them to a sealed container)
You can refrigerate for up to 1 week or freeze for up to 3 months.
