
Peanut Butter Energy Balls
These are my kiddos favorite after school snack. They are super yummy!
Ingredients
- 1 1/4 cups gluten free rolled oats
- 2 tbsp flax seed
- 1/2 cup crunchy peanut butter
- 1/3 cup honey
- 1 tsp pure vanilla extract
- 1/2 cup semi sweet chocolate chips
Instructions
- Place all of the ingredients in a large mixing bowl and stir to combine. Place the bowl in the refrigerator for 1 hour to set (this will make the balls easier to roll later on).
- Remove the bowl from the refrigerator and portion the dough into balls of desired size and place them on a cookie sheet. (I store mine on a cookie sheet in the fridge. Until they are hard and then I move them to a sealed container)
Notes
You can refrigerate for up to 1 week or freeze for up to 3 months.
