The only alfredo sauce ever!

Alfredo Sauce

We have made this since we got married. We didn't like the taste of canned alfredo sauce and found the perfect taste here. This recipe is very versatile, you can add more cheese and different types, whatever your family likes. Make it yours. It's so yummy!

Ingredients
  

  • 1/2 cup butter
  • 8 oz whipped cream cheese
  • 2 tsp garlic powder
  • 2 cups milk I've only used whole milk for this recipe
  • 6 oz grated parmesan cheese
  • 1/8 tsp ground black pepper

Instructions
 

  • melt butter in a non-stick saucepan over medium heat
  • add cream cheese and garlic powder
  • Stir with a whisk until all is smooth
  • Slowly pour milk in and keep whisking until all lumps are gone
  • Stir in parmesan cheese and pepper
  • Watch the consistency and when it is just right remove from the heat because the sauce will thicken rapidly. (If the sauce gets too thick then add more milk.)

Hayden’s Crockpot Taco Soup

We make this year around, and it’s super easy. 
Just dump the ingredients and head off to work.

Ingredients
  

  • 1.5 lbs ground beef
  • 1 onion chopped I buy frozen chopped onions and keep them on hand to cut down on prep
  • 1 pack taco seasoning
  • 15 oz can of kidney beans
  • 15 oz can of black beans
  • 1 bag frozen sweet corn
  • 14.5 oz can of diced tomatoes with chiles
  • 2 cups beef broth you can also use water

Instructions
 

  • Spray the crockpot or use the Slow Cooker Liners for a less messy clean up
  • Cook the ground beef, drain well and add to the crockpot
  • Add all of the other ingredients into the crockpot 
  • Stir well and let it cook on low for 8 hours

Notes

We top ours with shredded cheese, sour cream, and avocado. (Aaron adds extra hot sauce to his).
Serve with cornbread or tortilla chips.

Anytime I make this, we have to triple the recipe and then the kids want to take it for lunch everyday. It’s the perfect meal for a picky eater!

Ingredients
  

  • Rotisserie Chicken
  • Yellow Rice We use the Vigo Saffron yellow rice mix, and Zatarains New Orleans Style is also great

Instructions
 

  • Prepare the Yellow Rice according to the package (replace the water with chicken broth)
  • While the rice is cooking, shred the rotisserie chicken (you can also buy shredded chicken at Costco if you are in a rush or don’t want to mess with shredding chicken)
  • Once the rice is done, add the shredded chicken to the pot and mix well

Notes

We serve ours with salad and black beans.

Aaron’s Loaded BBQ Potatoes

Aaron’s Loaded BBQ Potatoes

Ingredients
  

  • 3 lbs Chicken Breast
  • 2 cups BBQ Sauce We use Sweet Baby Ray's
  • 2 tbsp Worcestershire Sauce
  • 1/4 cup Brown Sugar
  • 1/2 cup Italian Dressing
  • 5 Potatoes

Instructions
 

  • Spray the crockpot well with cooking spray or use a slow cooker liner
  • Add BBQ sauce, Worcestershire sauce, and brown sugar to the crockpot and stir well
  • Add chicken and toss to coat. 
  • Cover and cook on high 3-4 hours or low for 6-7 hours.
  • Remove chicken to a cutting board and shred the chicken. (I normally shred it while it's still in the crockpot so I don't dirty more dishes)
  • Place the shredded chicken back in the crockpot and stir well.
  • Scoop chicken with sauce on top of a cooked baked potato (We use the wrapped baked potatoes that you put into the microwave for 5 minutes.)

Notes

We top ours with coleslaw, Famous Dave’s spicy pickles, shredded cheese, and bacon.
We serve ours with a salad and creamed corn.
