Hayden’s Crockpot Taco Soup
We make this year around, and it’s super easy. Just dump the ingredients and head off to work.
Ingredients
- 1.5 lbs ground beef
- 1 onion chopped I buy frozen chopped onions and keep them on hand to cut down on prep
- 1 pack taco seasoning
- 15 oz can of kidney beans
- 15 oz can of black beans
- 1 bag frozen sweet corn
- 14.5 oz can of diced tomatoes with chiles
- 2 cups beef broth you can also use water
Instructions
- Spray the crockpot or use the Slow Cooker Liners for a less messy clean up
- Cook the ground beef, drain well and add to the crockpot
- Add all of the other ingredients into the crockpot
- Stir well and let it cook on low for 8 hours
Notes
We top ours with shredded cheese, sour cream, and avocado. (Aaron adds extra hot sauce to his).
Serve with cornbread or tortilla chips.
